Thai Basil Stir Fry with Coconut Cauliflower Rice

Sooo good! Summer has some of the best flavors! Basil and fresh herbs are definitely game changers in Summer meals. This refreshing thai inspired dish gives me all the summer time feels!


Here's the recipe:

Coconut rice

- 1 Tbls avocado oil

- 20 oz frozen cauliflower rice

- 1/4 cup coconut milk

- pinch of salt

- 1/2 cup coconut chips


Stir Fry

- 1 Tbls avocado oil

- 1 lb steaks, cut into bite size pieces (It is also tasty with chicken thighs)

- 1/2 cup white onion, diced

- 3 cloves garlic, minced

- 1 Tbls minced ginger

- 2 carrots, spiralized or julienned

- 1 zucchini, spiralized or julienned

- 2 bok choy, chopped

- 1 cup basil, chopped


Sauce

- 1/4 cup coconut aminos

- 1/4 tsp fish sauce

- 1 Tbls coconut milk

- juice of 1/2 lime

- 1 tsp ground ginger

- 1 tsp garlic powder

- 1/4 tsp salt

- 1 tsp tapioca powder


Topping:

- crushed coconut chips

- avocado


Directions:

In a pan heat the avocado oil and add in the cauliflower rice, once cooked down a bit add in the salt and coconut milk. Cook for about 8 mins remove from heat.

For the stir fry, heat the pan with avo oil, add in the onion, garlic, ginger, and meat. While that is cooking whisk all the ingredients for the sauce. Once the stir fry is close to being done stir in the sauce, it should thicken slightly, then add in the veggies (cook for about 3 mins. Turn the heat off and add in the chopped basil. Top the rice with coconut chips and the stir fry with avocado.
