In my Butcherbox this month I received pork butt and as soon as I saw it I started craving my carnitas recipe! Pork butt is the best cut of meat for carnitas because it has lots of fat on it that gets perfectly crispy in the broiler and is mouth watering!
Here's the recipe:
Pork Butt (2-4 lbs)
1/2 cup bone broth
1 navel orange
1 lime
1/2 onion
3 garlic cloves
1 Tbls salt
Directions:
If the pork butt is too thick cut it in half raw (4+ inches is "too thick") In your instant pot add the pork butt, bone broth, and salt. Zest the entire orange and lime, then the juice of both, and put the remainder into it the instant pot. Quarter the 1/2 onion, and mince the garlic cloves and add in the instant pot.
Set the instant pot to meat and for 45 minutes. Allow to naturally release when done.
Take the meat out and place on a cutting board. shred or cut into cubes and place on parchment paper on a baking sheet. Put in the oven on HI Broil. Broil for 5-10 minutes until crispy.
Tacos: Almond flour Seite tortillas, lettuce, purple cabbage, radishes, cilantro, avocado, lime
Taco Bowls: cauliflower rice, purple cabbage, cilantro, lime, avocado
