Gluten free & dairy free
I LOVE pad thai so much! If you are looking for a recipe that has even more sensitivities removed you can find it here, but this recipe does include grains, seeds, & legumes.
Here's the recipe:
1 lb chicken thighs
1 package pad thai rice noodles
5 carrots julienned
Cilantro
Peanuts
Bamboo shoots
and any other veggies you want
For the sauce:
1 cup chicken bone broth
1/2 cup coconut aminos
1 Tbls molasses
1 Tbls sesame oil
1 Tbls rice vinegar
1/2 tsp fish sauce
1/4 cup peanut butter
1" thumb of minced ginger
5 garlic cloves minced
Juice of one lime
Directions:
Heat your saute pan to medium and cut the chicken into bite size pieces. Mix the sauce together and place the chicken and sauce in the pan and cover for about 5 minutes, chicken should be mostly cooked through. Add in the noodles, be sure they are all submerged, and cover for 2-3 mins, add in the carrots (& any other veggies you want) and cover again until everything is well cooked and liquid has been absorbed. (add more bone broth if needed).
Once cooked top with cilantro, peanuts, bamboo shoots, & lime
